Day 24, Le Caylar
Le Caylar is half motorway service station and half medieval village. The name means “The Castle” and their was a medieval fortress built on a rock outcrop above the present town.
The natural rock formations were used.
From this natural arrow slit protestant defenders could rain arrows down on invaders from the catholic south, especially if they approached up the N75 from Nimes.
A nice quiet place. One restaurant in town, good, I try the local speciality “saucccisse aligot” Aligot is mashed potato mixed with new cheese, it takes on a soft plasticine texture, not tasty, quite bland. Sausage is delicious, Aveyron sausage, Aveyron is this department of France.
